This recipe was inspired by my love of Hail Merry’s Raw Chocolate Chip Cookie Dough Bites combined with the ease and simplicity of a raw cookie dough recipe in my friend Jennifer Emich’s cookbook, Eat Drink Shine.
Easy to whip together in under 15 minutes, most likely with ingredients you have in your pantry right now. Seriously, you are going to love it.

CHOCOLATE CHIP COCONUT COOKIE DOUGH
Equipment: Food Processor
Ingredients
1 cup almond flour
¾ cup shredded coconut
1 tsp Himalayan pink salt
¼ cup maple syrup
1 tsp vanilla
3 TB coconut oil, melted
¼ cup chocolate chips
Directions
Put almond flour, coconut, salt, maple syrup, vanilla, and coconut oil into a food processor for about a minute. Transfer the “dough” to a small bowl and stir in the chocolate chips. Cover and refrigerate for up to 7 days. Enjoy by the spoonful or roll into small dough balls.
